So for this recipe, I chose to use a slightly healthier alternative to the usual texturized soy or gluten protein crumbles that make up the base of most other vegetarian chili recipes. Ingredients of Vegan mushroom chilli

  1. It's of Oil of your choice (Olive, vegetable, groundnut all work well).
  2. Prepare 1 kg of (approx. 2 packs) Chestnut mushrooms.
  3. You need 1 of large red onion.
  4. Prepare 3-4 cloves of garlic.
  5. You need 800 g of (approx. 2 cans) Red kidney beans (in a chilli sauce if you prefer).
  6. You need 400 ml of water.
  7. You need 2-3 of red chilli peppers (to taste) (or you can use bird's eye, or finger chillis if you prefer it with more heat).
  8. It's 2 of Capsicum peppers (I tend to use one red and one yellow).
  9. Prepare 1 tbsp of Smoked sweet paprika.
  10. Prepare 1 tsp of Chilli powder.
  11. Prepare 1 tsp of Ground cumin.
  12. Prepare 1 tsp of Ground coriander.
  13. Prepare 1 tbsp of Sea salt.
  14. Prepare 1 tbsp of Ground black pepper.
  15. You need 1 of square Dark chocolate (Optional).
  16. Prepare 2 tsp of Cocoa powder (Optional).
  17. You need 1 tbsp of Tomato puree.
  18. You need 2 tbsp of BBQ sauce.
  19. You need 125 ml of Red wine (check the label for a vegan one!).
  20. It's 1 tbsp of Liquid smoke (Optional).
  21. Prepare Handful of fresh coriander.

The flavour comes from the mushroom base, but is boosted by untraditional ingredients such as soy sauce, balsamic, maple syrup and chocolate. Heat the oil in a large pot over medium heat, and cook the onions until tender. Stir in the garlic, chili powder, and cayenne pepper. Vegan mushroom chilli step by step

  1. Start by rough chopping all of your mushrooms and then place in your food processor. Pulse until you have a very fine, almost-paste of mushrooms..
  2. Add 1 tbsp of oil to a large saucepan and place on a medium heat. When oil is hot, add mushrooms, chilli powder, paprika, cumin, ground coriander, sea salt, black pepper, stir well and place lid on. Stir frequently to stop them sticking. Add a little water if required..
  3. Whilst these cook, finely chop onion and garlic..
  4. After 5-10 minutes, take mushroom mix off the heat, place into a bowl and put aside..
  5. Reusing the pan, add another tablespoon of oil and when hot, add onion, garlic, and chilli peppers..
  6. When onion is soft and translucent, add the kidney beans, tomato puree, BBQ sauce, the mushroom mix, 400ml water (use an empty bean can), cocoa powder OR square of dark chocolate, small glass of red wine and liquid smoke. (In other words, everything else except the capsicum peppers)..
  7. Stir well..
  8. Leave to cook for as long as you can e.g. 45 mins to an hour on low heat. The sauce should thicken up in this time..
  9. Slice the capsicum peppers and put aside, adding them ten minutes before you intend to serve. Season to taste..
  10. Serve with basmati rice, tortillas or baked potatoes, and sprinkle with freshly chopped coriander..

I recommend getting a tofu press to all of my vegetarian/vegan patients and yet, somehow I don't have one myself!
