Easy Vegetarian One-Pot Pasta step by step

  1. Chop all vegetables.
  2. Place pasta in bottom of pot 1st.
  3. Minus the parmesan cheese, add all other ingredients.
  4. Cook on high heat to bring to boil while stirring occasionally to keep pasta from sticking to bottom of pot..
  5. Once pasta is cooked, drain remaining water if any is left.
  6. Serve and dust with parmesan.

Season with salt and pepper, than add the vegetable broth, non-dairy milk, and pasta and stir until combined. I absolutely LOVE pasta and I love quick and easy meals! So this Asian style vegan one pot pasta with coconut milk and red curry paste is absolutely perfect. It's my new favorite meal for weeknight dinners.
