Recipe: Appetizing Veggie Chow Mein
Veggie Chow Mein. The traditional chow mein sauce contains oyster sauce (as well as meat). This vegetarian/vegan version of chow mein is very close to the traditional version, but I have created a sauce without oyster sauce in it. Bring a large pot of salted water to a boil over high heat.

- Prepare 1 tbsp of oil.
- It's 1/2 of onion, sliced.
- Prepare 2 cloves of garlic, minced.
- It's 1/2 of mild red chili (deseeded), sliced.
- It's 4 of medium mushrooms, sliced.
- It's 100 g of bean sprouts.
- It's 100 g of noodles (egg noodles are best, but use a vegan alternative if required).
- You need 3 tbsp of dark soy sauce.
- You need 1 tbsp of rice vinegar.
- It's 1/2 tbsp of brown sugar.

Veggie Chow Mein step by step
- Heat the oil in a large wok, and add the onion, garlic and chilli. Cook over a medium heat for a couple of minutes, then add the remaining vegetables. Cook for 5 more minutes, stirring regularly..
- While the vegetables are stir frying, boil the noodles if required, and drain..
- Add the noodles to the vegetables, and then add all the ingredients for the dressing (soy sauce to brown sugar). I just add each ingredient straight to the pan, but you could mix the dressing up separately first if you prefer, and then add it all together..
- Cook for a couple of minutes more, and then serve..
