Recipe: Delicious Sig's Pineapple Salad

Sig's Pineapple Salad. Great recipe for Sig's Pineapple Salad. I wanted to try and do something a little more on a savoury line with pineapple. So I thought I try something different and adapted a recipe I was given by an acquaintance of mine.

Sig's Pineapple Salad Just messing around with ideas turned out interesting flavours combination that work. Blend in flour, cream of tartar, soda, and salt. Ingredients of Sig's Pineapple Salad

  1. Prepare of pineapple cubes, fresh or canned but very well drained..
  2. You need of finely chopped mint and a pinch of dried.
  3. Prepare of almond flakes optional.
  4. Prepare of dressing.
  5. Prepare of garlic clove, crushed.
  6. Prepare of oblong shallot, crushed or minced.
  7. It's of chilli, red, seeds removed, very finely chopped.
  8. It's of runny honey.
  9. Prepare of light soy sauce or 1/4 teaspoon Worcestershire Sauce mixed with1 tablespoon of water ( if using Worcestershire Sauce and water drain of about half of the liquid or it will get to soggy ,after mixing with pineapple).
  10. It's of pinch of dried basil.
  11. You need of torn fresh basil optional.

This recipe was given to my by my sister in law, Lucy Mwangi who is from Kenya. Wherever I have travelled in East Africa, I have always been served a similar salad. Depending on the country or the region sometimes the vegetables are sliced finely, sometimes with avocado or peppers and often served with vinegar or even gin! Make it a Chef Salad with ham and turkey.

Sig's Pineapple Salad instructions

  1. Mix the pineapple with the dried mint and put into a bowl. Add the almonds if using them.
  2. In a separate bowl mix all dressing ingredients except fresh basil.
  3. Pour dressing over the pineapple herb mix. Gently mix the torn basil under if using..
  4. Leave to stand for 15 minutes or do for flavours to infuse.
