Recipe: Yummy Jicama Salad

Jicama Salad. Combine jicama, carrots, red onion, both peppers, tomato in a medium bowl. Whisk together the lime juice, vinegar, honey, olive oil and cayenne and season with salt and pepper to taste. I first encountered jicama (pronounced HICK-ah-mah) years ago in cafeteria salad bars, and on its own (how they typically serve it in those places), jicama can be a little boring.

Jicama Salad Jicama is easily accessible in my part of the world and I am always looking for new and different ways to prepare it. This recipe is from The New Family Cookbook for People with Diabetes. Makes a nice addition to a cookout. You can have Jicama Salad using 10 ingredients and 3 steps. Here is how you cook that.

Ingredients of Jicama Salad

  1. Prepare 1 large of Jicama, peeled and diced.
  2. You need 1 each of Sweet red bell pepper.
  3. It's 1/2 each of Red onion, sliced thin.
  4. You need 1 can of Mandarin oranges, drained.
  5. It's 1/2 cup of Fresh cilantro, chopped.
  6. You need of dressing.
  7. It's 2 each of Limes or lemons, juiced.
  8. You need 2 tbsp of Olive oil.
  9. Prepare 1/2 tsp of Each salt and pepper.
  10. You need 1 pinch of Cheyenne pepper or red pepper flakes (optional).

Please note: The cook time is the recommended chilling time. Combine the jicama, carrots, cabbage and onion, cucumber, red pepper and cilantro in large bowl and toss. Cut jicama, mango and red pepper into matchsticks; place in a large bowl. Jicama Slaw is a crunchy, fresh, light, and satisfying healthy vegan salad loaded with shredded veggies and tossed in a light and tangy vinaigrette.

Jicama Salad instructions

  1. Mix the dressing first so you can toss the jicama in it after chopping (this will prevent the jicama from oxidizing ...turning brown like an apple does when cut)..
  2. Chop all veggies and mix well in dressing..
  3. Refrigerate for a few hours before serving for best flavor. Allowing the citrus marinade to infuse into the salad..

Cut the lime in half and squeeze one lime half over the jicama; set the second half aside. Jicama Salad with Mango, Cucumber, Avocado, Lime and Aleppo Chile Flakes - a delicious healthy side dish that pairs well with grilled chicken and fish. Perfect for alfresco dining, outdoor gatherings, barbecues and potlucks! Combine the reserved orange juice, fresh lime juice, salt, and chili powder. Pour juice mixture over jicama mixture, and toss gently.
