- Prepare of Stuffing.
- You need 6 large of green bell peppers.
- You need 1 1/2 cup of brown rice.
- It's 3 tbsp of soy sauce.
- Prepare 3 tbsp of cooking sherry.
- It's 1 1/2 cup of extra firm tofu.
- It's 1 tsp of vegetarian Worcestershire sauce.
- You need 1/4 cup of chopped pecans.
- You need 1/2 cup of sweetened dried cranberries.
- Prepare 1/2 cup of grated Parmesan cheese.
- It's 1 of pepper to taste.
- You need of Sauce.
- You need 2 cup of tomato sauce.
- Prepare 2 tbsp of brown sugar.
Vegetarian Stuffed Peppers instructions
- preheat oven to 350°F (175 degrees C).
- in a saucepan bring 3 cups of water to a boil.
- stir in rice.
- reduce heat, cover and simmer for 40 minutes.
- meanwhile, core and seed green peppers, leaving bottoms intact.
- place pepper in a microwavable dish with about 1/2 inch of water at the bottom.
- microwave on high for 6 minutes.
- in a small frying pan bring the soy sauce, wine, and Worcestershire sauce to a simmer.
- add tofu and simmer until the liquid is absorbed.
- combine rice (after of has cooled), tofu, cranberries, nuts, cheese and pepper; pack firmly into peppers.
- return the peppers to the dish you first microwaved them in.
- bake in preheated oven for 25-30 minutes, or until lightly browned on top.
- meanwhile, in a small saucepan over low heat, combine tomato sauce and brown sugar; heat until it is hot throughout.
