- heat pot add enough olive oil to lightly cover the bottom of the pot I use a dutch oven on the stove top.
- add onions zucchini,squash,garlic and spices NOT THE BAY LEAVES OR THE RAISINS add seasoned salt and pepper to taste I do not measure but do what works well for you.
- let's cook down for 2 to 3 minutes while stirring.
- add sweet potatoes and let them cook in the oil for 5 to 6 minutes stir every other minute.
- add 1/2 cup of water and let sweet potatoes soften while you begin to brown your meat.
- in a separate pan add ground beef and bay leaves seasoned salt and pepper to taste,and brown your meat.
- in a separate pot cook 1 cup of couscous according to the directions.
- after sweet potatoes have softened add ground turkey and couscous and raisins now you have a wonderful ethnic inspired dish to share with others it is ok if all the water and or oil is not fully absorbed the couscous will absorb the rest.
