So I made this cauliflower couscous salad again the other day for lunch and loved it even more. A new go to lunch recipe. The food so nice they named it twice. And I feel like I won a gold medal in the kitchen when my couscous-loving husband didn't bat an eye while he gobbled up this "pretend" version.

Cauliflower "Couscous" (Vegan) step by step

  1. Cut all vegetables into small dice.
  2. Put cauliflower floret in blend and pulse it till it looks like crumbs.
  3. In pan with 1tbsp of olive oil sautee onion then add all vegetable and dry saute for 2 minute.
  4. Add salt mix well then off heat and add lemon juice.
  5. Serve with some finely grated lemon zest.

Heat frying pan over medium heat. Cut the cauliflower into large chunks and place in a food processor or hand held blender. This delicious couscous is delicious, healthy and ridiculously easy to make. Use it as meal prep for the week, it stores really well in tupperwares :) Or use as a side dish for some more moroccan. Meanwhile make the cauliflower couscous: Pulse cauliflower florets in a food processor until finely chopped (about the size of couscous).
