  1. It's 3 clove of garlic, finely chopped.
  2. It's 2 of hot red chilli peppers, finely chopped with seeds.
  3. You need 180 ml of water.
  4. You need 100 grams of granulated sugar.
  5. Prepare 60 ml of cider vinegar.
  6. You need 1/2 tsp of salt.
  7. Prepare 1 tbsp of cornstarch / cornflour.

Combine all the ingredients in a small bowl and stir until the sugar is dissolved. Sweet, sticky, totally addictive Thai Chili Sauce for dipping grilled meats, spring rolls, dumplings, potstickers, fried wontons, crab rangoon and just about anything else you can dream up. I can never believe how much they charge for this sauce in bottles at the store. Combine all ingredients in a small sealable container.

Vickys Thai-Style Sweet Chilli Dipping Sauce step by step

  1. Put the water, sugar, vinegar and salt in a small saucepan and bring to the boil.
  2. Add the garlic and chillies and turn down to a simmer for 3 minutes.
  3. Mix the cornstarch with 2 tablespoons of water to make a slurry then stir it into the pan.
  4. Let cook for a further 2 minutes until the sauce is thickened, syrupy and clear.
  5. Let cool then pour into a sterilized jar, large enough to hold around 240mls / 1 cup.
  6. Keep in the fridge for up to 3 months.
  7. Enjoy with chicken, fish, spring rolls, fries/chips etc.
