I promise you that you will LOVE them. They're one of my all-time favorite recipes! Made these vegan meatballs for dinner last night using canned and drained chickpeas. (We try to avoid soy.) - You need 400 g of chickpeas (soaked overnight and dried).
- You need 20 g of fresh basil.
- It's 35 g of sun-dried tomatoes (dry, not in oil).
- It's 40 g of breadcrumbs.
- You need 1 Tbsp of flax seed meal + 2.5 Tbsp water.
- Prepare 2 cloves of garlic.
- It's of olive oil.
- Prepare of salt, pepper.
- You need of tomato sauce.
- Prepare of spaghetti.
I used them on top of spaghetti squash with some tomato and basil marinara sauce —- so delicious! Place the oats in a bowl and cover with the boiling water. Meanwhile, wash and dry the red potatoes, leaving the skin on. These vegan meatballs are flavorful, satisfying and just plain amazing on top of some spaghetti noodles with marinara sauce.

- Prepare flax egg in a bowl by mixing flax seed meal with water..
- Sauté minced garlic with a tbsp of olive oil in a skillet until slightly browned. Cool slightly and add to the bowl with flax egg..
- Add 25g breadcrumbs, chopped basil, chopped sun-dried tomatoes, salt, pepper and a tbsp of olive oil. Blend them together..
- Add chickpeas, and blend everything together. Grind them well, but do not make it pasty..
- Form into balls - about 12 in total. Then roll in additional bread crumbs..
- Brown them for about 5 minutes in the skillet with some olive oil, shaking the pan to roll them around to brown all sides..
- Put meatballs on a bare baking sheet and transfer to the preheated oven (375F/190C) and bake for 15 minutes..
- In the meantime prepare some vegan spaghetti and tomato sauce..
- Once meatballs are golden brown, remove from oven. Let cool briefly before serving..
The best part is how simple they are to make. Now, they aren't going to fool a meat eater into thinking they're eating meat. But they definitely satisfy the "spaghetti and meatballs" craving!
