Recipe: Appetizing Leek Omelette

To add a bit of umami to this leek and sweet potato omelette, a dash of parmesan and a pinch of rosemary was thrown in as well. Meanwhile, cut the potatoes in half, then into slices about ½cm thick. Ingredients of Leek Omelette

  1. You need of EGGS.
  2. You need 1 dash of salt and pepper.
  3. Prepare 2 of eggs.
  4. You need of ADDITIONAL ADD ON OPTION.
  5. Prepare 2 slice of chedder cheese strip or any cheese.
  6. Prepare 1 stick of leek slice thinly into rings.
  7. It's 1 tbsp of butter.
  8. Prepare of OPTIONAL GARNISH.
  9. Prepare 1 tbsp of each of heinz tomato and chili sauce.

Beat the eggs, season, then stir in the cheese and sage. Add your chopped leeks to a hot pan with ghee (or coconut oil if dairy-free), cook until soft, then add the eggs, pushing the cooked portions from the edge towards the center. When time comes, fold the omelet over (shredded cheese optional) with a quick flick of the wrist. This bacon and leek omelette is perfect for a weekend brunch or lunch.

Leek Omelette instructions

  1. Season eggs then set aside.
  2. With butter lightly sauté leeks 1 minute then add beaten eggs.
  3. Additional add on chedder cheese then cover lid for 2 minute till cheese are melted and eggs are lightly brown and crisps.
  4. Flip one side of the omelette and serve as a light diet brunch or sandwich fillings or as side dish.

I made two versions - added some cheese to one of them, and some fresh herbs to the other one. Serve it with wholesome bread and/or a crunchy salad.
