- You need 3 of avocados, ripe but firm.
- You need 80 grams of plain / gluten-free flour.
- Prepare of coconut milk or alternative.
- It's of breadcrumbs made with 4 slices of gf bread.
- Prepare 1 tbsp of melted sunflower spread.
- It's 1/2 tsp of onion powder.
- It's 1/2 tsp of garlic powder.
- It's 1/2 tsp of paprika.
- It's 1/2 tsp of salt.
- Prepare 1/4 tsp of black pepper.

- Preheat oven to gas 6 / 200C / 400°F and place a wire rack over a baking tray.
- Halve the avocados and remove the stone, then slice each half lengthways into 4.
- Now remove the skins with the knife.
- In one bowl put the flour. In another some milk. In a 3rd bowl mix the other ingredients together.
- Dredge the avocado slices in the flour, then milk, then seasoned breadcrumbs and place on the wire rack.
- When all are done give them a light spray with cooking oil and put them in the oven to bake, turning once halfway through, for 20 minutes or until the crumb is golden.
- Let rest and cool for 10 minutes then serve with a nice dipping sauce such as ranch or sweet chilli. These really go with anything so whatever you like!.
