Rocky Road Cupcakes The way the three different textures and flavors come together is absolutely perfect! These cupcakes have a chocolate cake base loaded with walnuts and filled with marshmallow fluff in the center. Rocky Road is glorious, and my weakness. Ingredients of Rocky Road Cupcakes

  1. It's 1 cup of All Purpose Flour.
  2. It's 1/4 cup of Cocoa unsweetened Powder (adjust as per intensity of chocolate flavor required).
  3. Prepare 1/2 cup of Sugar Powdered (adjust to taste).
  4. It's a pinch of Salt.
  5. Prepare a pinch of Espresso Instant Powder (or 2 teaspoons Coffee).
  6. Prepare 1 teaspoon of Baking Soda.
  7. Prepare 1/2 teaspoon of Baking Powder.
  8. You need 1/3 cup of Sour Cream Yogurt or Plain.
  9. You need 1 teaspoon of Vanilla Extract.
  10. You need 1/4 cup of Vegetable Oil.
  11. It's 2 Tablespoons of Butter Melted.
  12. Prepare 1/2 cup of Nuts chopped (any or a mixture of Almonds, Walnuts, Pistachios, Cashew etc).
  13. It's 1/2 cup of Marshmallows chopped or mini (there are vegan options available too).
  14. You need 1/2 cup of Chocolate Chopped.

The other week I posted the recipe for my Cornflake & Malteser Rocky Road and it was a definite success with so many people making it! (Thank you!) I thought that it was about time I posted my recipe for Rocky Road Cupcakes as a few have asked if I had a recipe, and I wanted to make them for a Party so it seemed appropriate! Let the cupcakes cool slightly, then transfer them to a rack. Sift together the flour, cocoa powder, baking powder and salt into a large bowl. Stir in the sugar, chocolate chips and marshmallows.

Rocky Road Cupcakes instructions

  1. Preheat oven to 160 C / 325 F. (Reduce to 140 or 150 C if using convection oven) Line cupcake mold with liners..
  2. Mix together the dry ingredients - flour, cocoa, sugar, salt, espresso powder, baking powder and baking soda - well. Set aside..
  3. Mix together yogurt, oil, vanilla extract and melted butter..
  4. Sift in the dry ingredients. Gently mix to form a smooth, lump-free batter..
  5. Add half of the marshmallows, chocolate and nuts and mix well to distribute evenly..
  6. Scoop out the cake batter into the cupcake mold. Bake for 25 minutes at 160 C..
  7. Remove the cupcakes, top them with marshmallow and chocolate. Bake for another 5-7 minutes until the chocolate starts to melt and the marshmallows start to roast..
  8. Let them cool for a bit; unmold and enjoy..
  9. Have them warm or at room temperature..
  10. To store, place in an air tight box and store in the fridge. Before eating, warm it up slightly.
