  8. Prepare 1/2 of good vegetable stock cube.
  9. It's 1/4 of onion , sliced finely for serving.

  1. First clean your cauliflower and prepare ready for boiling. Put cauliflower in pot just cover with water and boil gently until it is almost cooked..
  2. Whilst the cauliflower is boiling make the cheese and onion sauce . Very finely grate or puree the peeled onion.
  3. Heat the butter in a pan, add the pureed onions and the crushed garlic simmer until soft. Do not fry or let them go brown.
  4. Add the flour and stir thoroughly until a ball forms.
  5. Add the milk constantly stirring until you get the consistency you wish for the sauce to have. Then stir in the broken up cheese and stock cube .Stir until thick and creamy.
  6. Put the well drained, cooked cauliflower into a oven proof dish. Pour over the sauce , filling the gaps..
  7. Bake under a hot grill until golden brown . Serve with the fried 1/4 onion.

The desire for a batch of cauliflower croquettes was still there since the "hiccup" in the kitchen so in I went in for round two.
