I always make a few batches at a time and freeze them in bars. But my favorite use for millet is as the backbone for homemade breakfast bars as is the case with today's recipe. These bars come from the pages of Feast: Generous Vegetarian Meals for any Eater and Every Appetite, a cookbook by my friend Sarah Copeland.   1. It's 1/2 cup of Peanut Butter.
  2. It's 1/4 cup of Rice syrup.
  3. Prepare 1/4 cup of Maple Syrup.
  4. It's 1 tsp of Vanilla Extract.
  5. You need 1/2 tsp of Cinnamon.
  6. Prepare 1/2 tsp of Salt.
  7. It's 1/3 cup of Protein Powder (Optional).
  8. Prepare 2 cup of Quick Cook Oats.

Mom's Breakfast Bars instructions

  1. Heat peanut butter, maple syrup, and rice syrup in a sauce pan over medium low heat.
  2. Stir until smooth and melted.
  3. Add cinnamon, salt, vanilla, and oats.
  4. Stir until well mixed.
  5. Pour into and 8x8 pan lined with parchment paper and bake at 350 for 18 minutes.
  6. Remove from pan, set on cooling rack, and cut.

Skip the overpriced store bought bars, and make these instead for a healthy breakfast, snack, or treat on the go or anytime! I'm always on the lookout for healthy snacks for my family, especially easy recipes since I am pretty busy. Stir in flour and baking powder until well blended. Stir in cheese, spinach and onion. Spoon egg mixture into baking dish.
