Easiest Way to Prepare Yummy Fancy marinara
Fancy marinara. This is vegan for just the sauce. It's probably too strong to just put it on spaghetti. I use it for cheese-stuffed tortellini or giant shells, usually with Italian sausage.

- You need 1/4 cup of extra virgin olive oil.
- It's 2 bags (12 oz) of each ) frozen chopped onion.
- It's 1 Tbs of salt.
- Prepare 1 1/2 cups of shredded carrot.
- It's 1 cup of chopped celery.
- It's 2 of red bell peppers, diced.
- It's 1 cup of minced garlic.
- Prepare 1 bottle (750 ml) of Shiraz.
- It's 4-28 oz of cans diced tomatoes; heat-roasted is good.
- You need 1 Tbs of hot sauce -- basic cayenne, like Frank's.
- You need 1 cup of sun-dried tomato, cut to 1/2" or less pieces.
- Prepare 1 of /2 Tbs ground black pepper.
- It's 1/2 Tbs of ground peppercorn mix (e.g., McCormick "Peppercorn Medley").
- You need 3 of bay leaves.
- Prepare 1 Tbs of fennel seed, optional -- skip if you're going to be adding Italian sausage.
- Prepare 1 package of fresh baby spinach (6oz), chopped fine.
- You need 1 package of fresh basil, chopped fine.
- You need 1 package of fresh oregano, chopped fine.
- You need 1 can (12 oz) of tomato paste.
- It's 1/2 cup of nutritional yeast, optional if you're going to add parmesan later -- definite if you're keeping it vegan.
- Prepare 1 cup of maple syrup, optional -- if you like it sweet.
I actually like to use a combination of a more melty cheese like mozzarella with a cheese that has more of a bite like Parmesan. Take your favorite vino (I like to use a sangiovese) and deglaze the pan after sautéing meat or vegetables so you can get all the tasty brown bits, known as fond, into your sauce. Fancy marinara step by step
- Use a big pot; I believe mine is six quarts. Saute the onions in the olive oil, with salt, until they visibly start to brown..
- Add the carrot and continue another couple of minutes..
- Add the celery, pepper and garlic and cook another couple of minutes (no longer saute'ing because there's just too much in the pan)..
- Add the wine, tomatoes, hot sauce, dried tomato bits, pepper, bay leaves and fennel, and stir. Turn down the heat once it starts to bubble, and maintain a simmer..
- While the rest is simmering, chop the basil, oregano and spinach, and add those as they're ready..
- Maintain the uncovered simmer until the sauce reduces to a consistency that's a just little thinner than your desired final result (the tomato paste will thicken it some later). Stir occasionally, but there's nothing in it yet that burns very easily..
- Simmer covered for thirty minutes. Stir occasionally, but do not open the lid for the last several minutes to make the inside of the pot fairly sterile..
- Turn off the heat and let it cool (in a garage or fruit cellar if you have one) without removing the lid. Chill and leave for the next day, or at least several hours..
- Find and remove the three bay leaves..
- Mix in the tomato paste and reheat. Stir in the maple syrup (if using it) and serve..
