We call it "tortilla de patatas" (potato omelette in English) and it's made of eggs, potatoes, olive oil and salt, and some people add onion too.

Today, I am delighted to be sharing one of personal favourite recipes with you - Spanish Omelette (Tortilla de Patatas). Yep, not a single egg in sight. In my pre-vegan days, Spanish Tortilla was a favourite comfort food of mine, but I love this vegan version even more. Carefully slide the tortilla onto a large plate or cutting board, uncooked side up.

  1. Heat 1 tbsp of the olive oil in a large medium pan and add the chopped onions, chopped red bell pepper and potatoes. Cook on a low heat for about 20 minutes until the potatoes are cooked through.
  2. Meanwhile, mix the chickpea flour and water together in a bowl with the salt and pepper.
  3. Once the potatoes and onions are cooked, add them to the chickpea mix and stir gently to combine..
  4. Add the chickpea mixture and cook on a medium heat for 5-8 minutes until the bottom is cooked..
  5. When both sides are brown and the tortilla is cooked through, cut into slices and serve hot or cold with a green chatny..

Cover the tortilla with the frying pan (use over mitts to avoid burning your hands) and carefully flip the tortilla. Once cooked, slide the tortilla onto a large serving plate and enjoy. Spanish Tortilla is a very popular dish in Spanish cuisine, it can be served as a tapa with some bread or eaten with some salad. I really like Spanish Tortilla and I promise you this recipe is very close flavour wise to the original (the one that has eggs). So, the magic ingredient that replaces the eggs is chickpea flour.
