How to Make Yummy Gypsy Soup

Gypsy Soup. This "Gypsy Soup" from Moosewood simply kills it. They've cultivated quite an abundance of cookbooks under their name, including the hand-written original where this recipe comes from. Gypsy Soup is a one-pot soup that goes together quickly, yet is rich, spicy, and full of flavor.

Gypsy Soup Heat olive oil in a stock pot over medium-high heat. Yesterday was our first day of winter weather here in Portland. We are in the process of moving at the moment, so today I decided to make a batch of my favorite soup to enjoy after a long, cold day of packing and moving boxes. You can cook Gypsy Soup using 18 ingredients and 8 steps. Here is how you cook that.

Ingredients of Gypsy Soup

  1. It's 1 of splash of olive oil.
  2. Prepare 2 of roughly chopped onions.
  3. Prepare 4 stick of of celery, chopped.
  4. It's 2 cup of sweet potato/kumara, cubed.
  5. You need 3 clove of garlic, crushed.
  6. Prepare 5 cup of water.
  7. It's 2 tsp of paprika.
  8. You need 1 tsp of tumeric.
  9. You need 1 tsp of sweet basil.
  10. It's 1 of bay leaf.
  11. You need 1 dash of cinnamon.
  12. It's 1 dash of cayenne pepper.
  13. You need 1 of capscicum, chopped.
  14. You need 1 cup of peas.
  15. It's 1 can of tomatoes.
  16. You need 1 can of chickpeas.
  17. Prepare 1 tsp of salt.
  18. It's 3 tbsp of tamari/ soy sauce.

I discovered this recipe years ago and have made it over and over. And if all of this weren't enough, eating gypsy soup can make you a good little feminist. Add seasonings, (except for tamar)i and stock or water. Add remaining vegetables, tamari and chickpeas.

Gypsy Soup instructions

  1. Heat the olive oil in a large soup pot and add onion and celery. Sweat for five - ten minutes until starts to glisten.
  2. Add the sweet potato and garlic and sweat for another five or so minutes.
  3. Add the water amd all spices except for the salt and soy sauce.
  4. Simmer covered for 15 minutes.
  5. Add the chickpeas, tomatoes and all other vegetables. Simmer for a further 10 -15 minutes.
  6. Add the salt and soy sauce (tamari is a gluten free option if you need it)..
  7. Stir through, check your seasonings and serve..
  8. Note : you can use any vegetables really. As long as you have a root vegetable and something green for colour. I've used potatoes and brocolli instead of sweet potato and peas in the past. delicious! My partner likes his with a dollop of sour cream which is pretty yummy too :).
